Delicious, nutritious recipes with the benefits of Ensure
Avocado and smashed pea
Serves 2
Ingredients:
- 1 avocado, peeled, pitted, cubed
- 2 scoops Ensure Neutral powder
- 60g goat’s cheese, crumbled
- Juice of ½ a lime
- ½ cup frozen peas, thawed
- 2 tbsp chopped parsley
- 2 slices dark rye bread, toasted
- 1½ tbsp extra virgin olive oil
- Salt and pepper to taste
Method:
- Add avocado, Ensure Neutral powder, peas, lime juice and seasoning to a mixing bowl and gently mash with a fork to combine. Make sure there are no visible lumps of Ensure powder in the mixture.
- Gently fold through goat’s cheese, ½ tbsp oil and parsley.
- Drizzle toasted dark rye slices with remaining oil.
- Top toast with avocado and pea mix
- Consider serving with eggs and/or smoked salmon
