Chocolate Chip Muffins

Using the extra nutritional boost from Ensure Chocolate, these muffins are full of 28 essential vitamins and minerals, but most importantly full of plenty of chocolatey goodness! This is the perfect 3pm snack!

Serves: Makes 12

 

Ingredients:

  • 1½ cups Ensure Chocolate Powder
  • 1½ cups all-purpose flour
  • 1 cup white sugar
  • ¾ cup milk chocolate chips
  • ½ cup cocoa powder (unsweetened)
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 cup natural yogurt
  • ½ cup milk
  • ½ cup vegetable oil

Method:

  1. Preheat oven to 200°C. Grease 12 muffin cups.
  2. Combine Ensure Chocolate Powder, flour, sugar, chocolate chips, cocoa powder and baking powder in a large bowl.
  3. Whisk egg, yoghurt, milk, vanilla extract and vegetable oil in another bowl until smooth; pour into chocolate mixture and stir until batter is just blended. Fill prepared muffin cups 3/4 full.
  4. Bake in oven for 15-20 minutes.
  5. Remove from tray and allow to cool on wire rack.
