Ingredients:

  • 10 scoops Ensure Chocolate Powder
  • 1 tablespoon raw cacao (or cocoa powder)
  • 1/3 cup raw cashews
  • ¼ cup slivered almonds
  • ½ cup pitted fresh (medjool) dates
  • ½ cup pitted prunes
  • 1/3 cup dried apricots
  • ¼ cup moist coconut flakes (or desiccated coconut)
  • 2 teaspoons coconut oil
  • 2 tablespoons desiccated coconut (for coating)

Method:

  1. Process Ensure, cacao, cashews, almonds, dates, prunes and apricots until a course crumb.
  2. Add coconut oil and process until mixture comes together.
  3. Roll heaped teaspoons of mixture into balls and coat in coconut.
  4. Chill for at least 2 hours before serving.

Can be frozen.
