Serves: Makes 8
- 6 scoops Ensure Vanilla Powder
- 1¼ cups all-purpose flour
- ½ cup full cream milk
- ½ cup Greek yoghurt
- 20g butter, chopped
- Preheat oven to 200°C.
- Sift flour and Ensure Powder into a bowl. Rub in butter with fingertips. Make a well in the centre of the mixture and pour milk into well. Gently stir until well formed.
- Add Greek yoghurt and mix well.
- Remove dough onto a lightly floured surface and knead gently until smooth.
- Press dough into a 2cm thick mound. Use a 5cm cookie cutter to cut out scones. Repeat until all dough has been cut. Place scones on baking tray lightly dusted with flour.
- Bake for 12 minutes or until lightly golden-brown. Serve with jam and whipped cream.
