Vanilla and Blueberry Muffins

If you’re feeling a bit blue, then these muffins ought to cheer you right up! Blueberry and Vanilla muffins, made with a special ingredient, Ensure Vanilla. By using Ensure Vanilla, you not only get a delicious flavour but a nutritional boost with 28 essential vitamins and minerals.

Serves: Makes 12

 

Ingredients:

  • 1½ cup Ensure Vanilla Powder
  • 1½ cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup sugar
  • 1 cup natural yoghurt
  • 1 egg
  • ½ cup full cream milk
  • ½ cup vegetable oil

Method:

  1. Preheat oven to 200°C. Grease 12 muffin cups.
  2. Combine flour, sugar, Ensure Vanilla Powder and baking powder in a large mixing bowl.
  3. Whisk egg, yoghurt, milk, and vegetable oil in another bowl until smooth; pour into dry mixture and stir until batter is just blended.
  4. Fill prepared muffin cups 3/4 full. Bake in oven for 15-20 minutes.
  5. Remove from tray and allow to cool on wire rack.
